Kidney Beans have a high content of Vitamin B9, also known as folate. Many people know folate because it is very important for the body and lacks can lead to serious damage in the body. It is necessary to produce red blood cells as well as produce and repair DNA. A lack of folate can lead to anaemia, which means that there are not enough red blood cells to transport oxygen. This will affect their function. Therefore folate is especially important for pregnant women. Symptoms of folate deficiency include fatigue, gray hair, mouth sores, tongue swelling and growth problems.
Kidney Beans contains a considerable amount of toxic protein. This protein can be found in many beans, but Kidney Beans, contain a high level. The poisoning that comes from this protein could lead to diarrhoea and vomiting. In rare cases is can also lead to hospitalization. Therefore it is important to soak and cook it thoroughly, as this eliminates all the toxins. To do so it is advised to soak the beans for 5 hours and boil at 100°C for 10 minutes.
